Applesauce Cake (gluten free)
2 cups Bob’s Red Mill gluten free flour
2 cups sugar
1 tsp cinnamon
1 tsp baking soda
1 tsp salt
1 cup sweetened apple sauce
1 cup olive or canola oil
4 eggs
1 cup very finely chopped pecans or walnuts
Preheat oven to 350 degrees.
Butter and flour Bundt pan or 13 x 9 baking dish.
Combine dry ingredients until well mixed. Then stir in remaining ingredients and beat on medium speed 1 minute.
Pour into prepared baking pan and bake for 1 hour and 10 minutes.
If using Bundt pan, let cool 3 minutes before turning out on serving plate.
