Pecan Muffins (gluten free)
1 cup Bob’s Red Mill gluten free 1 to 1 baking flour
2 cups brown sugar
4 cups chopped pecans
1 & 1/3 cup butter, softened
4 eggs
Preheat oven to 350.
Combine flour, sugar and pecans.
Set aside.
Beat butter and eggs.
Stir in flour mixture.
Spray muffin pan generously.
Fill each cup 2/3 full.
Bake approximately 20-22 minutes.
Let cool 10 minutes in pan.
Cool completely on wire rack.
Yield: 24 muffins
